Venison heart for a little grill-side snack.




Finished rib. I pulled them at the perfect temp but made the mistake of wrapping them to rest, so they came out just south of medium. Still delicious and moist..

We both started with arancini. The wife had a beautiful pear and blue cheese salad. We both went for the Wagyu tri-tips which they absolutely nailed. Finished with salted chocolate mousse with candied orange peel.

I bought a whole tenderloin for NYE but let my daughter take over the kitchen to make a bunch of stuff for a party that I also drove her to. IDGAF about NYE, so it worked out perfectly. The steaks sat in the marinade a few more hours and we cooked them this afternoon.

Have a chocolate pecan pie that just came out of the oven. I gave chat gpt a list of ingredients I have and told it to provide me with 20 desert recipes and in no time it did so. Went with this. Obviously Need to look into how to properly prepare the crust

And there's the catch. The spelled out recipe is available for money. In the video he lists the ingredients but leaves out certain amounts on some. So it's a guess by the amount he's shown pouring.

And that's ok. I get where he's going on cooking them. I'm not buying the recipe. I doubt he'd expect me too anyways.

Ribeye. Sous vide at 135 for a while. Finished with a sear at 600 on the grill, 2 minutes per side flipping every minute. Rest for 15 minutes.

Roasted carrots and broccoli, and some sautéed shiitake mushrooms with garlic and butter.

The wife cooked today. I just sat and was lazy.






A stale demi-baguette became croutons made with herbed chicken grease. She dressed our salads with olive oil, balsamic vinegar, honey, and fresh squeezed orange.
