Homemade barbacoa that simmered in the crock pot for 24 hrs. Side of black beans w/jalapeño jack cheese.

Freestyle tonight.

Chicken breast cut up. Fried. A sauce made up of a can condensed chicken queso blanco soup, can of whole corn, maybe some tomatoes. Thyme, rosemary, paprika, garlic powder, and chicken broth powder. Salt and pepper.

Served with Gordon Ramsay rice.

Burgers again tonight. Dropped the venison ratio down a little, so about 1# of ground wagyu and 3/4# venison. Made for a juicier burger. Added a little Parmesan cheese to the roasted broccoli tonight too.

Snacks for dinner. There’s a winter wind storm going on right now and the lights keep flickering. 18F with 21mph wind. Flatbread and fatty pan-fried burgers with avocado.

I'm also a big fan of Arizona Gunslinger hot sauce, but of their Chipotle Habanero variety! It's so good, that I order it by the quart!

My wife brought this home from Costco the other day. It's really freaking good. I've used it as a sandwich spread, dipping sauce, etc. She already went back for a second tub of it.

I don't do habanero anything. It's just too hot for me to enjoy. And honestly it has to be pretty special chipotle for me to get excited. As in house made normally. Then it can go off the charts.

Pork shoulder steak. Steamed brown potatoes and kinda boiled fresh snap peas.

Here's what this cut of pork looks like.




The potatoes were steamed 25 minutes and then the snap peas thrown in. Creole seasoning. The carbon steel has been preheating.

Slow fry in a mixture of olive oil and a lot of butter. By the time it's done. Browned on both sides. The potatoes are done. Hopefully. If I planned it right.
