What's that you're eating?

When my grandpa retired he’d stop by our house all the time, stop at Walgreens on his way, and pick up a ton of these butter cookies and I still love them to this day. I get very systematic about the order I eat them.

I don’t really have a system but once the tin is opened it seems I need to eat it within a couple days so my diet becomes butter cookies and water!
 
Well, turns out my white trash/trailer trash upbringing traumatized me into hating mushrooms because of the gross, low quality, canned stuff my mom used to force us to eat.

If you get fresh mushrooms and have even a modicum of culinary skill, they are delicious. I'm a huge fan of mushrooms now!
Yeah it's hard to screw up mushrooms but canning them is one way. I've been making a lot of mushroom chips lately, it's the best thing to do with boring mushrooms like baby bellas and you can put them in salads and on top of soup. Slice them as thinly as you can, toss them with oil and seasoning, then bake them in one layer at 300 until they're crispy.

I'm thinking I'm going to freeze dry a bunch of mushrooms so I can turn them into a powder to use as a rub on meat, but also as part of the base for gravy and soup.

I'll let everyone know how it goes.

If ya want to cheat a bit, many grocery stores sell mushroom seasoning in the Asian food section that is essentially that, plus salt and msg. Like a mushroom bullion powder.

On a related note, I've always wanted to this but never gotten around to it.

I haven’t turned any into powder, but that is a good idea. These are some we have freeze dried recently. Some shaggy bolete stalks, oysters, and cauliflower mushrooms. The shaggy stalks are pretty much like a citrus flavored Cheeto after freeze drying. Cauliflower mushroom are like pasta.

Mostly “no wash” here.
I cut off the bottom of stems if they are really dirty. Brush off (by hand) anything else.
If they are really dirty and I’m going to use them immediately then a light wash is okay, just don’t soak them.
They do sell brushes made for the purpose of cleaning them.
