What's that you're eating?

Wife made chicken and biscuits for lunch.

Definitely one of my top 3 favorite meals of all time, Shrimp Creole. 4# fresh 20-25 count gulf shrimp, a little roux, a little stock, holy trinity sautéed with a half stick of butter, crushed tomatoes & tomato sauce, seasoned to perfection then a little more cayenne pepper over the top just because that’s the cajun thing to do.

Wife surprised me with leftover biscuits and sausage gravy while I was working. Pretty sure she used the leftover chicken stock from the boiled carcass yesterday. Pork sausage, heavy cream, sage from the garden, flour, butter, salt & pepper. It’s out of the ordinary for us but I think she nailed it. It’s probably in her Texan genes. 😋

Used to travel to Raleigh quite a bit years ago on business, and we went to 42nd St Oyster Bar a lot. Always got their Shrimp Creole.

Steeped some shrimp tails for stock.

I got a roux going. The key is to sing Amos Moses while you stir.

Menage a quatre.

Andouille (I added twice this amount).

Homemade Cajun spice mix.

Last minute fixins (canned crab because I'm a cheapskate).

Et voila. Gumbo.

Edit: forgot to add photos of the okra. I probably added 1 lb at the beginning, then another 1 lb right at the end so that it wouldn't get too mushy. I love okra.
