Forgot to put a knife in the pic. Seven hour Texas red chili.
Long slow simmer is the way.You had me at 7 hrs! I love long cooks. Trying to decide what I’m going to cook today while waiting for Costco to open.

Thanks! Can confirm it is tasty. Nothing like pulled pork for breakfast. Yup, cooked through the night I my little electric smoker. I woke up a couple time to add on more wood chips to the firebox and check temps. Total cook was about 13-14 hours for 7ish lbs butt. That looks delicious! Cooked through the night?
Thank you sir!Looks tremendous!
That’s mouthwatering!View attachment 2952260

That sounds scrumptious! How did they taste? The only time I have had alligator was in a po’boy and it was fishy more chickeny flavor.Alligator and crawfish, alligator and pork sausages with taters, and beerView attachment 2955616View attachment 2955617
It was. The crawfish was prominent in that pairing, while the gator and pork was a good balance. Both had some heat but coming from Louisiana I would expect that. I enjoy alligator when properly cooked. The fish market I use gets it in 1 pound packages. I have fried and grilled it. I love fried food but prefer gator grilled. In restaurants you do not know about the oil that was used. That sounds scrumptious! How did they taste? The only time I have had alligator was in a po’boy and it was fishy more chickeny flavor.

That's a 'Having a lousy week at work and it's still only Sunday night' sort of meal!Alligator and crawfish, alligator and pork sausages with taters, and beerView attachment 2955616View attachment 2955617
