Its lent time, and i like to find creative uses for fish. I made some Fish Nachos the other night.
Tilapia marinated in Adobo. with a light flour coating and fried.
A semi-Remoulade (mayo, ketchup, pickled japs, red onion, garlic, cayenne, fresh squeezed lime juice)
lettuce, tomato, feta, any other cheese of your liking
on chips duh!

Pulled some Rainbows out of the afterbay today. Fried 'em up in a whole mess of bacon grease.
My Ladyfinger shined when it came time to clean the 'bows.
