Do you have a recipe for that great looking Tzatziki?
Greek yogurt
Cucumber
Garlic
Lemon juice
Mint leaf
Salt
Black Pepper
Olive oil

I skin, remove seeds and grate the cucumber, but the skin can be left on and it can be diced instead of grated.

Key issue is the moisture content of the cucumber. I normally prefer tzatziki on the thick side rather than a sauce. To reduce the moisture content roll the grated or diced cucumber in a couple of paper towels to soak it up before adding.

Half or whole squeezed lemon

Garlic to taste - crushed or finely diced

Mint leaf, fresh or dried. Any other preferred herb can be used

Salt and black pepper optional as preferred

Olive oil drizzled as preferred.

For me tzatziki is great with just about anything meat, fish grilled - or pan fried, salads etc. It is so simple and quick to make.
