Sorry, Christian, I should post more often. I get in a rut, and for several months have been carrying the same three knives most of the time (one at a time!). I did use my laguiole tonight to slice some tomatoes and cut some lettuce.

Yes, Alan, I don't know that there are many more beautiful knives than the Thiers. It is a fairly modern creation, but just lovely.
