French regional knives...

Just received my first Laguiole from Coutellerie du Barry. I'm not a knife reviewer but I'll do what I can. The first thing that gets me interested in a knife is its looks. This does not disappoint in any way. The handles are called black pine cone but i don't know what they actually are. It measures at 4" closed and the stamped blade is quite attractive. It's much thicker than I thought but feels good in the hand. It opens and closes with a smooth but hard pull of about 7-8. It exudes quality. I thought all Laguioles had a shepherd 's cross but if not that was my false impression. It arrived with a soft black leather slip. Sort of like a pair of driving gloves. Along with a business card and a card of photos a nice pen was included. Overall an impression of people that care about their product and how they appear. I'd have to rate it a 9.5 because after all I have to believe there's still a 10 out there.

I like the looks of the 12CM one.

I noticed it says “forged bee” (which I believe is the preferred option) in the description, but “welded bee” in the product details - if that is important to you, you may want to confirm before ordering. At the price it seems a good deal either way.
 
I noticed the discrepancy with the forged vs. the welded. I emailed the company about sizes. I'd prefer something around 10cm or even 9.5

For the reasonable price tag and also because of the small size, which is rare, it is welded. This is just an esthetic option, it cuts the same, which is what a knife is supposed to do. Genès David are no-nonsense knives, the mouche won't pop-up! 😊
Better have a well adjusted knife with a welded mouche rather than an expensive, but hastily assembled one, even with a forged mouche...
 
Jolipapa Jolipapa Thank you very much. He offers 3 sizes 8, 11 and 12cm. I emailed them to see if a custom size was available as the 8 is smaller than I'd want and the 11 and 12 are larger than I'd want. Time will tell.

Thank you for sharing your thoughts. One often reads that a forged mouche is a sign of quality, though no explanation is ever provided. I suppose it is similar to the issue of pinned vs glued shields. A completely non-functional concern.

I prefer pinned shields though, so naturally I want a forged mouche.
