Beautiful knife, Alan. I've got one Laguiole myself, in olive wood, that I love. Everyone should have at least one. Think I should get one with a corkscrew.I sharpened it out to my satisfaction. The Monteiros at Coutellerie du Barry said I could return it and they would do what was necessary but that seemed extreme unless I felt they should repair it or replace it. Swoon.My landlord in Ganac was using a interesting knife,he told me he got it in a shop in Foix.
So I had to detour.
Sadly didn’t have much time as it’s a pedestrian area,but what a great shop.
He even knew the owner in Brice where I got my Coutou knives from.
I bought 3 great knife slips but didn’t want to rush a knife purchase.
