The blood is collected and used to make a form of sausage. The brains are scrambled with eggs. The heart, liver and kidneys were cooked. All the meat was cooked while the fat was rendered. The meat is then placed in an open top metal can and the rendered fat poured over it. It will keep like that for months without refrigeration. Nothing goes to waste. In fact anything that wasn't fit for human consumption was fed to the pig. We tend to think of these things in ethical terms, here it is pure economics.
