Happy New Knife Saturday!

I picked up a Buck Range and Mini Range from Knife Center on the way home from work yesterday. This is the Mini.

So did you literally pick them up at Knife center or they were in the mail? You must be near my old stomping grounds as it is located in Fredericksburg. I have stopped by there too. How do you like the Mini Range? I like the look of it too.

Yes, I picked them up in person. I hadn’t gotten a shipping notification yet so I called as I was leaving work Friday afternoon and they were waiting for me at the front desk when I arrived. Too convenient!

I’m really liking both, but made a conscious decision to use the Mini for everything just to see what all it can handle. So far, no complaints! The cutting edge is only 6% shorter than a standard 112 Ranger, so it’s pretty similar, just a different blade shape.

I liked the smaller size, but think the larger one may be more hand filling. Thanks for sharing.

Jasmine Phoenix Pearls. The best green tea I've found with my favorite emerald micarta PM2. The leaves unfurl after a few min in 190F water.

I've read that some teas are supposed to be steeped in different temps other than boiling, but haven't tried it so far - everything has been boiling to this point.

How do you heat water to various temperatures? Do you use a thermometer, or is there a guide for recognizing various temperatures before you reach a full-on boil? Can you really tell a difference in the tea at different temperatures?

Glad you like the pic. I use an electric kettle and it has different temp settings. I've checked it with a thermometer and it's surprisingly accurate too. Mine is an older version of this and slightly different, but you get the idea. https://tinyurl.com/jw5dw3ub

I think you can tell the difference on white and green teas when doing it at the correct temps instead of full boiling. Even black tea benefits from a little less temp than a rolling boil. YMMV
