Only Sharp Knives Are Interesting- the Sharpening Thread

What knife/model is that?

Does anyone use any TSPROF sharpening systems? I have always hand sharpened for years but I wanted to get a system to try out to dial in exact angles so I ordered a Kadet Pro.

I already have and use Venev resin bonded stones so I will just be loading those in to the system to see how well they work in that application.

I will report back when it arrives with some results and pics!

Yes. Me and Yoko both have TSPROF setups.

*** I got the KO3 when they were quite a bit lower than the price they are now.

Ko3 is a great system! I have a kadet as well. I only use the Kadet on small blades. Always at the mercy of how symmetrical the blade was ground with these guided sharpening systems.

That great to hear! Have you been happy with it thus far? I looked into the K03 as well but figured with my first guided system, I would go for the Kadet first!

Awesome results! Do you opt for the K03 for larger blades just because you have both and it’s a larger sharpening system or do you feel like the Kadet was too small? I do plan to sharpen up to some ~6-7 inch blades but most will be folders and smaller fixed blades.

I've been using a TSPROF KO3 for years and have been extremely happy with the system. I've put some freakishly sharp edges on my CPKs with it.
I touched up my behemother recently to 24 dps and it can cut smoothly & cleanly through a held paper towel and cleanly pop hairs off my arm. I give high praises for fixed angle sharpening systems, and TSPROF is some of the very best. I'm sure you'll be happy with yours.

This is exactly the type of feedback I was looking for! Reviews are one thing but hearing directly from people here in the community that have a lot of experience is a lot more valuable to me personally. Thanks!

Thanks.
With the kadet, your angles change more quickly…meaning when your at one end of the blade compared to center, the fixed angle changes more on the smaller system with a longer blade. Still doable on the kadet!

The K03 is great (as are Venev plates)!

I got it specifically because it works for longer blades. My regular Gyuto is 10.5”, and my favorite CPK of all, is the MC with the 10” blade (and I’ve been used to large camp knives with 9-10” blades for a long time).

Just got done using the Kadet for the first time and I’m really impressed. I got an Axicube with it, set it to 19.5 degrees and got started. Stone progression was Vanev resin bonded F80 > F150 > F240. I finished up with a couple passes on a strop and got some pretty good results. I still think I will be doing a good bit of hand sharpening just because I like to do it but I will definitely be setting up quite a few knives on this. I’ll have to revisit it again sometime this weekend but very impressed so far!

I've been really tempted to buy one of these KMFS Vantaedge sharpeners just to play with it. They have a pivoting head design that is supposed to maintain the same edge angle even through the belly and out to the tip, clamp position theoretically doesn't matter. They handle up to a 9.5" blade without changing the clamp, so pretty good capacity and the build quality appears to be top notch. Just not a lot of info out there on them.

I'm going to have to check that out

I'm very curious to see how that KMFS Vantaedge works out. Sounds intriguing.

Been using a Kazak Pro Black with an Axicube and getting very good results. Though I do take it
to foolish extremes at times with fine grit stones.

My buddy Dave just got the TSPROF K03 with the Axicube on the rod and is extremely happy with his.

My set up in the pic.

Very interesting design and the price seems good. Please lets us know if you get one and how it works.

To sharpen my only CPK knife a BFK in Tweaked D3V (I only own 3 knives besides a few steak knives and Caphalon knives in the kitchen drawer), what would you say about the following 2 options at the bottom:

(Context: My goal is to have a way to sharpen the best way possible without relying on a sharpening system at home and in the event I don't have access to a stropping compound. This would be like a bug out situation or supply chain issues (compound is out of stock). Sorry in advance if I don't use the right terminology. No one in my family taught me about knives so I'm trying to learn on my own so I can pass the skills of knife handling/usage on to my 5 children. I could imagine in this situation, keeping a knife sharp is important and am wondering if I can use extra fine diamond or ceramic as a substitute for leather strop loaded with compound. Instead of stockpiling CPKs to avoid learning how to sharpen, as I don't have the budget for that, would any of you who are experienced give your approval on either (or neither) of these 2 portable guided sharpeners below? I understand the ultimate goal would be to achieve freehand proficiency. I also plan to practice on a Cold Steel Finn Bear I recently picked up on sale on Amazon, so that i don't mess up my BFK. Thank you in advance for your advice)
