It probably doesn't, if the angles meet and aren't rounded over. In some ways a flat grind is fairly easy because you're just checking up on the flatness of the back of the blade. It it cuts, it cuts. I always feel that my kitchen knives need upgraded because they dull really fast if you look at them wrong. Bed Bath and Beyond specials. Which fits this thread, because they are garbage. You can get them shaving sharp, but they dull instantly.I actually have quite a few , especially on serrated knives .

I can get that thing screaming sharp. It doesn’t hold the edge a super long time, but it doesn’t dull instantly either. The tools have come in handy and are actually useful.
Saved the day several times, in fact. Sure, they aren’t as good as having a dedicated screwdriver, can opener, or awl, but they DO work.
