It's funny, but I've been cutting steak, and sausage, and other foods... but this particular knife is slow to patina.

Being from Florida, I didn’t know cheese curds existed until I met my wife who is from Iowa. They are SO GOOD. Every time we visit we load up on curds!Had a little care package delivered. They are not fresh enough to squeak when you eat them, but they are from Wisconsin so it’s a little taste of home.

That seems to be an unusually light patina considering what you've used it for John. My Case knives have patinaed pretty quickly when I've used them for food, much like GEC's 1095
