What's that you're eating?

I make ham-and-eggs for the wife just about every day, and sometimes for dinner. She’s a ham-and-eggs fiend. Two oz ham, two eggs, and half a croissant has become the golden standard these last few years.

Brown the ham with a little oil, turn the heat down and slow-scramble the eggs, adding a little salt at the very end. Toasted croissant. Ripe tomato. She never seems to get tired of it. 😂
 
I am so full. Went with an American wagyu NY strip and ribeye for the wife, kids and I to split. Had green bean casserole, fries, and artichokes to go with it. Only got a meat pic though 🤣

Ok so here it is. Cook 4-5 pieces of bacon and some frozen hash browns, set to the side. Make a bacon weave on top of Saran Wrap you laid on the counter which mine usually consist of 12-14 pieces of raw bacon, go with a good thick cut, we like Wright Brand. Get two pounds of Jimmy Dean breakfast sausage, whatever flavor, smash them flat on parchment paper approximately the size of your bacon weave. Lay 5 slices of cheddar cheese on your flattened breakfast sausage, add the hash browns and bacon you cooked earlier (chop bacon up first) and some Franks Red Hot on top of all that. Roll breakfast sausage up in the parchment paper to where everything is incased and nothing is exposed, then lay it in your bacon weave and roll it up, season it with whatever your preference is, wrap in Saran Wrap you had on the counter then put it in a loaf pan in the refrigerator, we usually let it sit over night then pop it in the oven or smoker. I start out at 250° for 1.5 hrs then every 45 min or so bump it 50°, usually takes about 3hrs to cook.

Lazy pot-roast tacos for dinner. Seared in Dutch oven, drained-off some rendered fat, added old red wine, Worcestershire, garlic, salt, pepper, and bay leaves. Simmered for 7 hrs.

Slaw of chopped cabbage, radish, tomato, carrot, red and green onions, dressed with Litehouse jalapeño ranch dressing and bagged cheese. Pretty sure this was the first time in my life buying formed taco shells. Wife and I both decided we prefer the flavor and crunch of our usual Guerrero tostadas.
 
Really like the way that people are upping their game when it comes to posting food pics!!!

I'm making my Asian style marinated/oven cooked pork ribs again tonight but, since I've posted pics of them before, I won't bother posting them again.

Going to stir fry some kale in garlic/ginger to serve as a veg w/reheated steamed white rice on this side.

It will be delish! ;)
