French regional knives...

My favorite French regional knife is the laguiole. I added a couple more today, thanks to the assistance of Âchillepattada Âchillepattada .

I probably shouldn't be surprised, but there is so much nuanced variety between the laguiole offerings. I'm not talking simply about obvious details like the different guillochage patterns, but things like handle contours. Look at these four -- all in the 12 cm size, but both the blade length and thickness vary.

Those are all beautiful, but the David Dauvillaire is stunning.

You're absolutely right mainly when you know that there is 2 or 3 producers of parts. It means that this diversity is born from the same set of parts .

Those are all beautiful, but the David Dauvillaire is stunning.

The four all have their charms. I like the blade and handle shape of the FP the most. I marvel at the fine details of the DD. I favor the juniper covers of the CdB, as well as the guillochage which reminds me of the jerky flight pattern of a bee. And I enjoy the elemental simplicity of the PYJ.

I think I have to figure out a way to order a laguiole that is truly custom made for me, from scratch with details that I choose. Perhaps I should get the Lemasson book first?
 
Not a Laguiole, but I had a great experience with the 'Couteliers de Fontainebleau' making a knife to my preferences.

Very pleasant and kept up communications through the entire process. Also giving great advice and alternatives to my sometimes goofy suggestions 🤔

A really, really beautiful knife, reminds me of a Breniere in the hand
